How does Paradise Island Foods produce this line of Lactose Free cheese?

This is REAL CHEESE, crafted in the same manner as our traditional cheeses. They are naturally lactose free, full of flavour and definitely do not disappoint the palate!

During the cheesemaking process, the cheese curds are put through a rinse to wash out much of the lactose before pressing into blocks. This rinse also helps to quickly lower the temperature of the curds, creating an ideal environment for the bacterial cultures to develop naturally.

The cheese is then stored under carefully monitored time and temperature conditions. This natural aging process of cheesemaking ensures ideal conditions for the bacterial cultures to thrive and work to consume the remaining lactose. Paradise Island Foods offer many varieties of premium cheese which can be consumed as a part of a lactose free diet.

Organic farming brings farm practice back to the essentials; it's purity from the first step onward. For a conventional farm to become certified organic, it must first pass through a three-year transitional phase. The land, the livestock and the crops need to adjust from conventional farming practices, and all of the chemicals and fertilizers need to work their way out of the environment.

At the same time, organic farmers have to keep meticulous records of their progress, and manage the farm responsibly and in accordance with sustainable, earth-and-animal friendly farming practices.

Cows are provided with care and attention to promote health and meet their behavioral needs, they enjoy a very content life. From May to October they have access to outdoor pasture for grazing, exercising and enjoying the sunshine. Through the remainder of the year, they are in the pasture as often as weather permits.

During Fall & Winter months they are fed a minimum of 60% grass/hay which is supplemented as required with organic grain such as soy, barley, oat, corn, and wheat. During the Summer the percentage of grass is much higher because the cows are spending longer amounts of time in the pasture.
