THE PROCESS

This is REAL CHEESE, crafted in the same manner as our traditional cheeses using 100% pure Canadian milk. They are naturally lactose free, full of flavour and do not disappoint the palate!

During the cheesemaking process, the cheese curds are put through a rinse to wash out much of the lactose before pressing into blocks. This rinse also helps to quickly lower the temperature of the curds, creating an ideal environment for the bacterial cultures to develop naturally.

The cheese is then stored under carefully monitored time and temperature conditions. This natural aging process of cheesemaking ensures ideal conditions for the bacterial cultures to thrive and work to consume the remaining lactose.

We offer a variety of Lactose Free cheese including Mozzarella, Medium Cheddar, Old Cheddar, Extra Old Cheddar and Jalapeno Monterey Jack (NEW!).
