Cheese Polenta with Chorizo & Lentil Ragu

This rustic Chorizo & Lentil Ragu served on top of cheese-filled polenta is a quick and delicious weeknight dinner. Made with our Lactose-Free Old Cheddar or Shredded Asiago, this hearty meal is ready in less than 40 minutes!

Recipe Ingredients

  1. tbsp. olive oil
  2. 1 chorizo sausage, sliced
  3. 2 garlic cloves, minced
  4. 1 onion, diced
  5. 1 (398ml) can dice tomatoes
  6. 1 (398ml) can of brown lentils
  7. 1 tbsp. tomato paste
  8. 1 cup dry polenta
  9. 3 ¼ cups vegetable stock
  10. ¾ cup Paradise Island Lactose-Free Old Cheddar or Shredded Asiago, grated
  11. Salt and pepper to taste
    Optional Garnish: fresh thyme and additional cheese

Recipe Directions

  1. In a medium pot on medium-high heat, add oil. Once heated add chorizo sausage and
    sauté until browned.
  2. Reduce heat slightly and add garlic and onion, cook for 3-4 minutes then add tomatoes,
    brown lentils, tomato paste and ¼ cup of water, stir to combine.
  3. Bring lentil mixture to a boil then reduce to a simmer and simmer for at least 10 minutes.
  4. As the lentil mixture is simmering, prepare polenta. In another medium pot on high heat
    add vegetable stock and bring to a boil.
  5. Once boiling, reduce heat and slowly add dry polenta into the stock and cook, stirring
    constantly for 4-5 minutes or until thick and smooth.
  6. Add the cheese to the polenta and stir until fully melted and season with salt and pepper.
  7. Divide polenta evenly on four plates and top evenly with lentil mixture, serve
