Classic Chicken Burrito
These simple Chicken Burritos made with our Lactose Free Jalapeño Monterey Jack, Lactose Free Old Cheddar, chopped tomatoes, rice, seasoned chicken, and beans are cheesy, full of flavour, and come together in less than 30 minutes!
Recipe Ingredients
- 6 large flour tortillas
- 3 cups Spanish rice, cooked
- 2 seasoned chicken breasts, fully cooked and sliced
- 1 ½ cups pinto or black beans
- ¾ cup Paradise Island Lactose Free Jalapeño Monterey Jack, grated
- ¾ cup Paradise Island Lactose Free Old Cheddar, grated
- 2 red peppers, sliced and sautéed
Optional add-ins: jalapeños, cilantro, salsa, guacamole and sour cream
Recipe Directions
- To prepare burritos, lay your six flour tortillas on clean counter and spread ½ cup of
rice in the middle of each tortilla. Top rice with ⅓ of a chicken breast, ¼ cup beans and ¼
cup cheeses (a mixture of both). Finally, evenly divide pepper slices on tortillas. - Fold in the two shorter ends of the tortillas and roll them up burrito style.
- Serve immediately and enjoy!
