Mexican Style Poutine
Poutine is a Canadian classic and adding a spin on a classic is a great way to mix two of the best flavours into one!
Recipe Ingredients
Gravy
- 2 tbsp oil
- 3 tbsp AP flour
- 2 tbsp taco seasoning
- 1 ¾ cup vegetable broth
- Salt to taste
Poutine Assembly
- 540g Waffle fries
- 200g Paradise Island Cheese Curds
- 1 chorizo sausage, diced
- ½ cup pico de gallo
Optional Garnish
- 2 green onions, sliced
- 2 radishes, sliced
- ½ jalapeno, sliced
- 2 tbsp cilantro
Recipe Directions
For gravy:
1. On low- medium heat add oil to a small pot. Once heated add flour and stir for about 3-4
minutes until it’s combined and puffs up slightly
2. Add taco seasoning and combine into the roux
3. Add vegetable stock and fully combine, let the gravy come to a simmer to thicken about
4-5 minutes. Set aside
Assembly:
4. Cook fries as per package directions
5. On medium-high heat in a small frying pan sear chorizo for 3-4 minutes or until crispy
6. On individual plates or a serving platter place hot fries. Add cheese curds and gravy on
top
7. Top with crispy chorizo, pico de gallo, and additional garnishes if you like, eat
immediately!
