Potato Nest Quiches

These little potato nest quiches are the best way to start your day, and easy to take away for busy mornings!

Recipe Ingredients

  • 1 567g bag of hash brown shredded potatoes
  • 3 tsp salt, divided
  • Spray oil
  • 5 eggs
  • 2 tbsp milk
  • 2 tsp hot sauce
  • ½ red pepper, diced small
  • 2 green onions, sliced
  • ¼ cup spinach, chopped
  • 160g Paradise Island Cheese Curds

Recipe Directions

1. Preheat the oven to 375° F. Grease a 12- cup nonstick muffin tin generously with cooking
spray
2. Evenly distribute the shredded potatoes into the muffin tin, using your fingers to create a
tightly packed nest. Season with 1 tsp salt and pepper and spray again with cooking oil
3. Cook potato nests for 35- 40 minutes or until golden brown and the potatoes are cooked
through
4. While potatoes are cooking, in a medium size bowl add eggs, milk, hot sauce, red pepper,
green onion, spinach, and salt then stir to combine
5. When nests come out of the oven place 2 to 3 cheese curds into each nest
6. Evenly distribute egg mixture into the 12 nests and bake for 10-12 minutes or until the
eggs are fully cooked
7. Serve immediately, and enjoy!
