Shakshuka with Feta

This is the perfect Shakshuka recipe for brunch! Hearty and savoury, this one skillet meal combines poached eggs in a chunky tomato sauce. Sprinkle with our regular Feta and enjoy.

Recipe Ingredients

  • 1 tbsp. olive oil
  • 1/2 a yellow onion, diced
  • 1 red bell pepper, diced
  • 1/8 tsp. salt
  • 2 cloves garlic, minced
  • 1 tbsp. tomato paste
  • 1/4 tsp. smoked paprika
  • 1/4 tsp. red pepper flakes
  • 1/2 a 28 oz. can of crushed tomatoes
  • 3 large eggs
  • 1/2 cup Paradise Island Feta, crumbled
  • A handful of chopped parsley for garnish

Recipe Directions

  1. Preheat oven to 375°F.
  2. Warm oil in a large oven-safe skillet over medium-high heat. Add peppers, onion, and salt, and stir for 4-5 minutes.
  3. Add tomato paste, garlic, smoked paprika, and red pepper flakes. Stir for 1-2 minutes.
  4. Add half a can of crushed tomatoes. Bring mixture to a simmer and continue cooking for 5 minutes.
  5. Turn off the heat and crack 3 eggs right into the skillet.
  6. Transfer skillet to oven and cook for 10 minutes or until eggs are cooked.
  7. Remove skillet from oven and sprinkle with Feta and parsley.
  8. Serve hot and enjoy.
