Smashed Potatoes with Shredded Parmesan

These crispy Parmesan Smashed Potatoes topped with our Shredded Parmesan make the most delicious side dish for any night of the week. They only require a few ingredients and 30 minutes to make.

Recipe Ingredients

  • 2 lbs. baby potatoes
  • 4 cloves garlic, minced
  • 1/4 cup Paradise Island Shredded Parmesan
  • 1/4 cup melted butter
  • Salt and pepper, to taste
  • Fresh parsley, chopped

Recipe Directions



  1. Bring a large pot of salted water to a boil.
  2. Place potatoes in boiling water, cover and let cook about 20-25 minutes until soft.
  3. Drain and let cool before placing in the oven.
  4. Pre heat oven to 450 °F.
  5. Melt butter in microwave. Stir in some parsley, garlic, and salt and pepper into butter.
  6. Arrange potatoes on a baking sheet and smash each potato wit the bottom of a glass jar.
  7. Drizzle butter mixture all over potatoes.
  8. Bake for 15 minutes.
  9. Once ready, sprinkle with Parmesan, salt, pepper, and parsley.
