Spicy Bean Tostadas
These simple and delicious Spicy Bean Tostadas made with seasoned beans, red cabbage, guacamole, and our Lactose Free Jalapeño Monterey are full of flavour and take less than 25 minutes to make!
Recipe Ingredients
- 6 tostadas
- 1 (16oz) can of pinto beans, drained
- 1 (16oz) can of black beans, drained
- 1 tbsp. chipotle pepper powder
- 1 tbsp. maple syrup
- ¼ tsp. ground cumin
- ¼ tsp .cayenne powder
- 2 tsp. hot sauce
- 1 ½ cups prepared guacamole
- 1 ½ cups red cabbage, shredded
- ¼ cup chipotle mayonnaise
- ½ cup Paradise Island Lactose Free Jalapeño Monterey Jack, grated
Optional garnishes: sliced jalapeños, lime slices, radishes and cilantro
Recipe Directions
- In a medium sized pot combine pinto beans, black beans, chipotle pepper powder, maple
syrup, ground cumin, cayenne powder and hot sauce. - On medium heat, heat bean mixture until warmed through (about 10 minutes).
- In the meantime, in a medium bowl combine cabbage and chipotle mayonnaise.
- To make tostadas, top each one with approximately ⅓ cup bean mixture, ¼ cup
guacamole, ¼ cup slaw mixture and sprinkle each with cheese and any other optional
toppings. - Serve immediately and enjoy!
