Strawberry Spinach & Couscous Salad
A light salad with fresh strawberries, spinach, couscous and creamy feta that’s perfect for summer entertaining!
Recipe Ingredients
Dressing
- ¼ cup oil
- ½ shallot, minced
- 2 ½ tbsp balsamic vinegar
- 2 tbsp honey
- 1 tsp dijon mustard
- Salt and pepper to taste
- Salt and pepper to taste
Salad
- 4 cups packed baby spinach
- 1 ½ cup couscous, cooked
- 2 cups strawberries, sliced
- ½ cup Paradise Island Feta, crumbled
- ¼ cup raw almonds, chopped and toasted
- 3 sprigs of mint for garnish
Recipe Directions
1. In a jar combine all salad dressing ingredients and tightly put on the lid. Shake until
emulsified and set aside.
2. On a large serving platter or bowl combine spinach, couscous, strawberries, feta, and
almonds then gently toss. Drizzle with dressing and garnish with mint.
3. Serve immediately and enjoy!
