Stuffed Zucchini Boats
Looking for a quick and easy recipe for dinner? Makes these healthy Stuffed Zucchini Boats loaded with veggies like tomatoes, peppers, corn, red onion, and olives. Sprinkle with Paradise Island Lactose-Free Medium Cheddar and bake until bubbly. This dish is on the table in less than 30 minutes.
Recipe Ingredients
- 2 zucchinis
- 3 tbsp. olive oil
- 1 cup diced tomatoes
- 1 cup diced bell peppers
- 1 cup sliced black olives
- 1 cup corn
- 1 cup diced red onion
- 1/2 tsp. salt
- 1/4 tsp black pepper
- Parsley, chopped
- 1 cup Paradise Island Lactose-Free Medium Cheddar, grated
Recipe Directions
- Preheat oven to 375°F.
- Line a baking dish or sheet pan with foil.
- Cut off ends of zucchini and cut in half lengthwise. Scoop out inside of zucchini.
- In a skillet over medium heat, heat 2 tbsp. oil and sauté all veggies for a few minutes. Add salt and pepper and combine.
- Divide filling between zucchini boats and top with grated cheese. Drizzle with remaining tbsp. of olive oil.
- Bake for 30 minutes until cheese is bubbly.
- Top with fresh parsley and enjoy.
