Baked Eggs with Spinach & Cheddar
These Baked Eggs with Spinach and Cheddar cheese are perfect for brunch! Made with simple ingredients and our Lactose-Free Old Cheddar, this recipe packed with comforting flavours only takes X minutes to make. Serve with some crusty bread and enjoy.
Recipe Ingredients
- A handful of spinach
- 4 eggs
- 1/2 cup Paradise Island Lactose-Free Old Cheddar, grated, divided
- 4 tbsp. cream (regular or lactose-free)
- Salt and pepper, to taste
Recipe Directions
- Preheat oven to 350°F.
- Fill ramekins with spinach and sprinkle with 1/4 cup of cheese (divided between 2 ramekins), salt, and pepper.
- Crack 2 eggs each on top of spinach, cheese, salt, and pepper.
- Add cream and remaining cheese to both ramekins.
- Bake for 5-7 minutes.
