Classic Grilled Cheese and Tomato Soup

Nothing more comforting than a classic grilled cheese and tomato soup. The perfect grilled cheese starts with the best cheese!

Recipe Ingredients

Tomato Soup

  • 9 ripe tomatoes, chopped
  • White onion, chopped 3 cloves of garlic, peeled
  • Red pepper, chopped 1 tbsp olive oil
  • 3 cups vegetable stock Basil for garnish
  • Salt and pepper to taste

Grilled Cheese

 

Recipe Directions

  1. Preheat the oven to 400° F.
  2. Place tomatoes, onion, garlic, and pepper on a parchment lined baking sheet and roast for 45 minutes.
  3. Carefully add the roasted vegetables to a blender. Add the stock and blend until it has a smooth consistency.
  4. Place blended soup into a medium-sized pot and simmer for 40 minutes to an hour. Salt and pepper to taste
  5. Spread each piece of bread with ½ tbsp of butter, making sure to spread on the outside of the bread.
  6. Place 4 slices of the buttered bread into a large flat pan and top with 70g (2.5 oz) of cheese on each slice and top with remaining buttered slices
  7. Heat pan on medium-low heat and cook for 4-6 minutes on each side or until perfectly crisp.
  8. Serve immediately with soup and garnish with fresh basil
