Classic Grilled Cheese and Tomato Soup
Nothing more comforting than a classic grilled cheese and tomato soup. The perfect grilled cheese starts with the best cheese!
Recipe Ingredients
Tomato Soup
- 9 ripe tomatoes, chopped
- White onion, chopped 3 cloves of garlic, peeled
- Red pepper, chopped 1 tbsp olive oil
- 3 cups vegetable stock Basil for garnish
- Salt and pepper to taste
Grilled Cheese
- 8 tbsp butter, divided
- 8 slices of your favourite sourdough bread
- 283g (10 oz) of Paradise Island Regular Extra Old White Cheddar Cheese or Lactose-Free White Extra Old Cheddar Cheese, sliced into four 70g (2.5 oz) portions.
Recipe Directions
- Preheat the oven to 400° F.
- Place tomatoes, onion, garlic, and pepper on a parchment lined baking sheet and roast for 45 minutes.
- Carefully add the roasted vegetables to a blender. Add the stock and blend until it has a smooth consistency.
- Place blended soup into a medium-sized pot and simmer for 40 minutes to an hour. Salt and pepper to taste
- Spread each piece of bread with ½ tbsp of butter, making sure to spread on the outside of the bread.
- Place 4 slices of the buttered bread into a large flat pan and top with 70g (2.5 oz) of cheese on each slice and top with remaining buttered slices
- Heat pan on medium-low heat and cook for 4-6 minutes on each side or until perfectly crisp.
- Serve immediately with soup and garnish with fresh basil
