Loaded Baked Potato Soup
This warm and comforting Loaded Baked Potato Soup made with Paradise Island Lactose-Free Medium Cheddar is loaded with potatoes, cheese, and bacon. What’s not to love about this rich and creamy soup?
Recipe Ingredients
- 4-5 potatoes, peeled and cubed
- 5 slices of bacon
- 4 tbsp. unsalted butter
- 3 cups half and half
- 2 cups chicken stock
- 1/2 cup onion, diced
- 1/3 cup all purpose flour
- 1 tsp. salt
- Black pepper, to taste
- 2 cups Paradise Island Lactose-Free Medium Cheddar, grated
- Sour cream
- Green onions, chopped
- Parsley, chopped
Recipe Directions
- Cook bacon as per directions until crisp. Chop into small pieces and set aside.
- In a large pot, melt butter over medium heat. Add in flour gradually, whisking until combined. Stir in half and half and whisk constantly until smooth and thick. Add in the chicken stock, salt, and pepper to taste.
- Add potatoes and onion. Bring to a boil before reducing heat. Let simmer for 10-15 minutes stirring occasionally.
- Stir in bacon and cheese, reserving some for garnish. Continue stirring until cheese has melted.
- Place in bowls and garnish with sour cream, more cheese, bacon, and parsley.
