Pumpkin Cheddar Muffins

These quick and easy Pumpkin Cheddar Muffins made with our Lactose-Free Old Coloured Cheddar strike up the perfect balance between the sweet and the savoury. Great for lunches or an afternoon snack, these delicious muffins will be a family favourite in no time.

Recipe Ingredients

  • 1 cup pumpkin purée
  • 2 eggs
  • 1 cup veggies of choice (carrots, red peppers)
  • 1/2 cup butter, melted
  • 3 tbsp. sour cream
  • 2 cups flour
  • 1 1/2 tsp. baking powder
  • 1/4 tsp. cayenne pepper
  • 1 1/2 tsp. salt
  • Black pepper, freshly ground
  • 1 1/2 cups Lactose-Free Old Cheddar, shredded
  • Pumpkin seeds

Recipe Directions

  1. Preheat oven to 400°F. Line 12 muffin pan with muffin cups.
  2. In a bowl, combine pumpkin purée, sour cream, and veggies of choice. Whisk in eggs and butter.
  3. In another bowl, add flour, baking powder, and spices. Whist together.
  4. Combine wet and dry ingredients and fold until combined. Add in cheese and continue to fold.
  5. Divide batter among muffin cups. Sprinkle pumpkin seeds on top.
  6. Bake for 20 minutes.
