Pumpkin Cheddar Muffins
These quick and easy Pumpkin Cheddar Muffins made with our Lactose-Free Old Coloured Cheddar strike up the perfect balance between the sweet and the savoury. Great for lunches or an afternoon snack, these delicious muffins will be a family favourite in no time.
Recipe Ingredients
- 1 cup pumpkin purée
- 2 eggs
- 1 cup veggies of choice (carrots, red peppers)
- 1/2 cup butter, melted
- 3 tbsp. sour cream
- 2 cups flour
- 1 1/2 tsp. baking powder
- 1/4 tsp. cayenne pepper
- 1 1/2 tsp. salt
- Black pepper, freshly ground
- 1 1/2 cups Lactose-Free Old Cheddar, shredded
- Pumpkin seeds
Recipe Directions
- Preheat oven to 400°F. Line 12 muffin pan with muffin cups.
- In a bowl, combine pumpkin purée, sour cream, and veggies of choice. Whisk in eggs and butter.
- In another bowl, add flour, baking powder, and spices. Whist together.
- Combine wet and dry ingredients and fold until combined. Add in cheese and continue to fold.
- Divide batter among muffin cups. Sprinkle pumpkin seeds on top.
- Bake for 20 minutes.
