Spring Salad with Feta

This healthy and colourful salad made with Paradise Island Feta is packed with veggies, chickpeas, and lots of fresh flavours! It’s a great meal prep recipe that can be enjoyed throughout the week.

Recipe Ingredients

  • 3 cups mixed greens, packed
  • 1 cup chickpeas, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 2 radishes, sliced
  • ½ lemon, thinly sliced
  • ¼ red onion, thinly sliced
  • 1 cup cucumber, sliced and quartered
  • ½ cup red and yellow peppers, diced
  • ½ cup Paradise Island Feta or Light Feta, crumbled
  • ¾ cup salad dressing
  • Cilantro for garnish
  • Pepper, to taste

Recipe Directions

  1. In four large bowls, divide and layer mixed greens, chickpeas, cherry tomatoes, radish slices, lemon slices, red onion, cucumber, and peppers. Top with a couple of tablespoons of crumbled feta.
  2. Finish bowl by drizzling dressing. Add cilantro and fresh cracked black pepper. Enjoy!
