Looking for a colourful winter salad packed with healthy goodness and cheese? Try our Winter Salad, made with quinoa, arugula, roasted sweet potatoes, Brussels sprouts, figs, pomegranate seeds, and creamy feta. Our regular or Light Feta adds texture and tang to this tasty salad.
- Preheat oven to 425 degrees Fahrenheit.
- Cook tri-colour quinoa as per package directions.
- Chop up sweet potatoes and Brussel sprouts (use how ever many you would like) and drizzle with olive oil. Sprinkle salt and pepper, to taste. Transfer to a parchment lined baking sheet and bake for 25-30 minutes.
- Fill bowls with arugula, cooked quinoa, roasted sweet potatoes and Brussel sprouts. Top with pomegranate seeds, fresh figs, crumbled feta and your favourite dressing.
